    Based on other business models of the same concept in cities around the country, I am hopeful to add one or two additional trucks, increasing over-all profitability. As well, hire a few employees as necessary to assist and operate the other trucks (including college students during the summer high season). I have an entrepreneurial mindset and spirt, with 25 years of experience. I believe my experience as a prior business owner in retail, owner of an event designer company, wardrobe consultant and fashion show producer, manager, sales person, actor, cabaret performer, writer, speaker, and certified life coach has set me up to be successful in this creative personable endeavor. Thus, I have also acquired extensive knowledge in PR and marketing. After researching this business model, I have found other successful companies. Regarding the Chicago area- there has only been one other, which moved into a retail flower shop. Prior to this, it has been 100 years! Chicago has been a growing market for the food truck industry (and misc. other trucks, such as pet washing, wine trucks, etc.), proving my concept could be a successful niche in the market.
