Diversion | Application Preview
Diversion is seeking government grants to support its growth and operational costs, which include payroll, rent, common area maintenance (CAM), and utilities. The business aims to expand by opening 2-3 new locations in the Salt Lake Valley over the next five years and enhancing its catering services to include more events, using an offsite food truck or booth during summer and winter gatherings.
The funding request is backed by a strong performance history, boasting over 500 Google reviews with a 4.7 rating, and excellent ratings across other platforms like Yelp and DoorDash. Diversion has created a menu that focuses on American comfort food prepared with a healthier approach; all items are baked rather than fried, catering to various dietary preferences, including vegan, vegetarian, low-carb, and gluten-free options.
The business actively supports the community by working with local organizations to provide meals to food-insecure families and by partnering with rehabilitation agencies to create job opportunities for individuals re-entering the workforce. Diversion has been recognized as Small Business of the Year by First Step House in 2021 and often ranks among the 'Most Loved Restaurants' on platforms like Nextdoor and DoorDash.
Situated in the Marmalade Square District of Salt Lake City, which is undergoing redevelopment, Diversion faces limited competition from nearby establishments, primarily consisting of a sushi restaurant, chicken wing eatery, and bubble tea shop. Its competitive advantage lies in its made-to-order baked food items, variety of dietary options, quick service, and the ability to serve alcohol, enhancing the dining experience.

Business Plan
Our plan is to expand to 2-3 additional locations within the Salt Lake Valley over the next 5 years. We would also like to expand out catering menu to accommodate more events. We currently cater to offices and warehouses, but would like to participate with more summer and winter events with an off site food truck or booth. We have over 500 google reviews from the last 3 years with a 4.7 rating! We also have great ratings on all platforms such as yelp, doordash, grubhub, and ubereats. We have built a menu to include American favorites with a healthier twist. We do not own a fryer and instead bake all of the menu items - burgers, fries, pizzas, and all other proteins and veggies. We have also worked hard to create a menu that can accommodate a large variety of eating styles including vegan, vegetarian, low carb, gluten-free, and over-all healthier options. We have also worked to support our community through collaborations with government entities, local business, and non-profits to provide hot healthy meals to food insecure families and children. We are advocates for underrepresented communities, and actively work with rehabilitation agencies to provide job opportunities for people to re=enter the work force. Diversion has received the Small Business of the Year from First Step House for 2021 and is consistently on the "Most Loved Restaurant" on Nextdoor and Doordash.

Self Identified Competition
Diversion is located in the Marmalade Square District of Salt lake City, which is currently undergoing redevelopment. There are few similar competitors within the district. Our immediate neighbors include a sushi restaurant, Wing restaurant, and Boba tea. Further out there are several taprooms and breweries. At Diversion, all food items are baked fresh to order. We have gluten free, vegan and vegetarian options and get orders out in a timely manner. Diversion also possesses a license to serve liquor and offers adult beverage items.
