Three Birds Catering and Charcuterie | Application Preview
Three Birds Catering and Charcuterie is seeking government grants to enhance its business operations by securing a dedicated building space, acquiring necessary equipment, and purchasing a catering van for deliveries. The primary objective is to establish a permanent location in Clay City, where there is a significant demand for a coffee shop, an addition that aligns with community needs.
The funding will be instrumental in revitalizing the local economy, as the business emphasizes collaboration with other small enterprises, promotes locally sourced products, and offers an event space. Given the economic downturn many local businesses faced after the Covid-19 pandemic, there is an acute need for catering services and a consistent flow of cash within the community. Three Birds aims to create stability for its family while providing valuable resources and support for the broader town.
In terms of competition, the business identifies existing establishments like Glory Days Restaurant, El Patron Restaurant, and Mayberry Malt and Coffee Shoppe. However, Three Birds possesses a unique competitive advantage with its handcrafted charcuterie boards made from locally sourced ingredients, a service unmatched within a 35-mile radius. Additionally, the seasonal operation and limited hours of the current coffee shop leave a gap in quality coffee availability, particularly during peak times, further highlighting the opportunity for Three Birds to fill this void.

Business Plan
The goal for Three Birds is to have a brick and mortar location in our small town of Clay City. Once this obtained, we plan to expand with adding a coffee shop, as this is not offered in our town and is highly requested and needed. Our business focuses on supporting other small businesses in our area, utilizing marketing, locally sourced product, and event space. We want to rejuvenate and grow our small town back to a thriving area. There is a tremendous need for not only catering services and coffee, but also cash flow and growth in this area, as many businesses were lost after the Covid-19 pandemic. We wish to not only provide stability for our family, but also provide wonderful resources to our small town.

Self Identified Competition
Glory Days Restaurant, El Patron Restaurant, Mayberry Malt and Coffee Shoppe Our artistic charcuterie boards and catering service that is made from scratch with locally sourced ingredients are unmatched. Nobody in a 35 mile radius offers charcuterie boards. Also, the malt and coffee shop is only open around 6 months a year and doesn’t open until 9 am, leaving our town without a source of quality coffee for the most important times of the day and year.
