The key to my new business is a robot to do custom detailing and designs on individual chocolate pieces for weddings, corporate events and the like. I am very familiar with the UR5e from Universal Robots: https://www.universal-robots.com/products/ur5-robot/ Custom monogrammed gourmet chocolates commands a high price with an excellent profit margin. I expect to spend $60,000 getting the robot and the necessary tooling in place. The ROI should be 9 months or less. The new shop would need an enrobing line to coat mass quantities of confections in an efficient and cost effective manor. The vendor I am looking at is remodeling their showroom and everything will be up for sale at the end of May. This would be a great opportunity to acquire some top of the line equipment at a solid discount. An enrobing line of modest capabilities can go for $50-60,000 fully outfitted. A molding station is also a standard in the chocolate shop. Although not as involved as the enrobing line, to do it efficiently requires automatic equipment, expect to pay $40-50,000 for new machines. Add in the cost of building out a new store and that $250,000 will just get you started.

expansion into other types of candies would be the next logical step. Additional lines for enrobing and molding in the original store. I would love to be able to add a new store within that 5 year window. I have been developing my recipes for about 6 months now. The folks at work have been very kind to help me decide what works best. The cinnamon caramel I have is simply delicious, nothing else out there even comes close. I use Callebaut Belgian chocolate exclusively. Real vanilla beans and freshly ground cinnamon sticks are at the core of the caramel. My BFC's ( Brian's Favorite Cookies) start out at 125 grams when they go in the oven. There is 400 grams of Callebaut dark and milk chocolate chips in just a dozen cookies. Self Identified Competition
In Brevard county Florida, there are only 3 shops that sell their own stuff. Grimaldi's mostly just coats potato chips and calls it a day. They have a very small selection of other things. There is another shop that only sells bars and bark. Two whole items on their menu, just different variations of the same thing. Dirt simple operation. The third is a relative of the Grimaldi family. They have 3 items on the menu. Chocolate covered potato chips and a milk or dark chocolate filled bonbon. Nothing fun or creative. Just a single mold with the same filling in either of 2 flavors. Tech Confections will offer a wide range of filled shells with a huge assortment of flavors. Standard vanilla cream caramel, that awesome cinnamon caramel, various ganache recipes that will make your eyes roll back. Wait until you try my white chocolate raspberry ganache in a dark chocolate shell. I also plan to offer a solid selection of sugar free treats for the folks that cannot have sugar. Not including a sugar-free line is just leaving money on the table.
