We plan on expanding to innovative advertising methods so when customers think of sushi they'll think of Express Sushi first, and we will also offer our customers the option of delivery and pick up but we know they'll want to stay for the robots. Long term - the goal is to franchise. In the next 5 years Calicorp LLC: DBA as Express Sushi plans to grow our business from 1 location to 3 locations in the surrounding area hiring 20 new employees and increasing projected sales from 300,000.00 a year to 900,000.00. Express Sushi’s conveyor belt technology enables the restaurant to have a very high customer turnover rate. Because customers can start grabbing items off the conveyor belt right away instead of waiting around for a server to come take their order, the time it would take for a customer to choose what they want and then wait for the server to bring their order is eliminated. 3. Automated ordering systems located at each seat will further eliminate the need for a large wait staff, which will also reduce wait times and increase kitchen staff efficiency.

    In the Oak Grove area of Fort Campbell, Kentucky there are no other conveyor belt sushi restaurants. The closest similar concept is Sushi Train located in Nashville, Tennessee. There are only four other sushi restaurants catering to conventional hand rolled Japanese american style sushi. However, no other sushi establishment can produce the consistency and speed that express sushi prides itself in. Express Sushi has the following advantages compared to our competitors: Sushi Robots produce consistent high quality sushi with less sushi trained chefs. Express Sushi’s conveyor belt technology enables the restaurant to have a very high customer turnover rate. Because customers can start grabbing items off the conveyor belt right away instead of waiting around for a server to come take their order, the time it would take for a customer to choose what they want and then wait for the server to bring their order is eliminated. Furthermore, because the conversation flow is hindered by the seating layout along the sushi bar, the customers at the bar do not spend as much time lingering after their meal to talk. Automated ordering systems located at each seat will further eliminate the need for a large wait staff which will increase profits with orders being sent directly to customer seat using express trains, will also reduce wait times and increase kitchen staff efficiency. The conveyor belt structure makes it very easy for customers to grab more than they actually want to eat, which leads them to spend more money. The conveyor belt creates a sense of urgency in the customers because they do not want to miss their chance to grab a desired item. They feel that if they let it pass without taking it, another customer will grab it instead and they may not get another chance. This thinking prompts them to grab additional plates even before they are finished with what they are currently eating. Even if a customer only eats one plate at a time, the conveyor belt still encourages eating because there is a delay in the time it takes for the stomach to communicate to the brain that it is full. Often, customers do not realize that they are full and continue to grab plates off the conveyor belt since they are so easily accessible. The conveyor includes an automatic tiny radio-enabled chips on the bottom of every plate. As the plates pass through the conveyor belt on each round, the Radio Frequency Identification (RFID) is scanned and a computer keeps track of how long each plate has been revolving. When the time limit is reached, the plates have to be remove off the conveyor By removing cognitive load on the sushi chefs, we can see improvements in sushi production to increase consumption. Our recommendation is to automate the sushi tracking process with analysis algorithms to find which dishes a chef should focus on creating. For example, if the system notices that customers are taking salmon dishes in high volumes in short amounts of time, this will flag as a higher priority for chefs to produce. This will also increase customer satisfaction and turnover when customers receive the dishes they want sooner and fresher.
