Funding Usage
A grant or loan of this size would cover most of my construction costs. I'm covering some of it myself through some private investors and I'm hoping to cover a large part of it with my own money.

Business Plan
There is no other food business anywhere in my area that can do what I do. My ideas are fresh, original and extremely popular. My hope is to open a second location within 5 years. As I said, there is no competition in my area. I have quickly acquired a passionate group of food lovers who are literally begging me to open a place. In a small town where everyone knows me, that is incredibly valuable. One other bonus is the location. It is directly located on State Route 24 which is the busiest highway other than Interstate 75 in our area.

Self Identified Competition
My menu will consist of Authentic Italian food, which the 3 nearest competitors are 15, 20 and 25 miles away respectively. I will also have Paninis with homemade bread which to my knowledge there's no-place within a hundred miles doing that. My restaurant is the culmination of 32 years of experience and love for food. Everything about it will be authentic. Not only Italian, but that is my specialty. Fresh ingredients. Decades of creating my own recipes. Training with highly trained chefs. I did not go to culinary school but the people that taught me my trade, did. I have spent more than 3 decades helping other peoples dreams come true, and I have done an excellent job. I still have great relationships with those people I helped. They are all rooting for me.
